Healthy Pickled Beets Recipe: A Nutritious and Flavorful Snack

  • 1½ tsp whole cloves
  • 1½ tsp whole allspice
  • ½ tsp salt

Instructions:

Prepare the Beets

  1. Scrub the beets thoroughly to remove dirt and debris, then trim the tops to about 1 inch.
  2. Place the beets in a Dutch oven and cover them with water.
  3. Heat until boiling, then reduce to a simmer. Cook, covered, for 25 to 30 minutes or until tender when pierced with a fork.
  4. Remove the beets from the water and let them cool. Once cooled, peel off the skins (they should slide off easily) and slice the beets into thin, even rounds. Set the sliced beets aside in a bowl.

Make the Pickling Brine

  1. In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to ensure the sugar dissolves completely. Let it boil for about 5 minutes.

Pickle the Beets

  1. Pour the hot pickling brine over the sliced beets, making sure they are fully covered.
  2. Cover the bowl with plastic wrap and refrigerate for at least one hour, though letting them sit longer will enhance the flavors.

Serve

  • Before serving, drain the excess liquid.
