Healthy and delicious pickled beets

Pickled food is a delicacy many people enjoy because of the crunchy texture, the balanced sweet-and-sour taste, and the health benefits it offers.

This type of food helps with digestion and is low in calories.

What’s most, pickling is an important part of a number of cultures and can complement a wide range of dishes, from sandwiches and salads to meats and cheeses.

Now, if the first thing that comes to your mind when speaking of pickled food are the pickles, you’re missing out on the variety of other foods that can be pickled, such as eggs, onions, carrots, and beets.

If you are a fan, here is an easy-to-make recipe for pickled beets.

  • 3-4 medium-sized beets
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1/4 cup honey or maple syrup (for a sweeter pickle) or 2 tablespoons if you prefer less sweetness
  • 1 teaspoon salt
  • 1 teaspoon mustard seeds (optional)
  • 1/2 teaspoon peppercorns (optional)
  • 2-3 cloves of garlic, peeled and smashed (optional)
  • Fresh dill or other herbs (optional)

Instructions:

Wash and trim the dish before boiling them for 30 to 40 minutes, or until they get tender. Allow them to cool and then cut them into rounds or wedges. In a small saucepan, mix together the apple cider vinegar, water, honey (or maple syrup), and salt. If desired, add mustard seeds, peppercorns, and garlic. Heat the mixture until it reaches a boil, stirring to ensure the honey is completely dissolved. Then, take it off the heat.

Put the beets into a jar and pour the hot brine over them, making sure they are fully submerged. Then add herbs and let the jar cool on room temperature. Seal it with a lid and put it in the fridge.

Whether you’ll use them in sandwiches, as a side dish, or as a snack, pickled beets can truly enhance your culinary experience.
